Named after the Japanese word for bookmark (栞), Shiori is a beautiful pause in your journey. The finest seasonal Edomae sushi, made through time-honoured techniques: jukusei aging, kobujime kelp-curing, and perfectly balanced aka shari.
In ancient Japan, travellers snapped twigs to mark their path through dense forests. That original meaning of shiori evolved into the modern word for bookmark: a placeholder in a cherished story. Our chef serves as your guide through the ever-changing nuances of the Japanese seasons.
